Mend Optima Plus Working Fine Removed

How can I set an exit time?

The system is an Optima Plus
Working fine until I removed the mains fuse, then unable to set an exit time. With keypad box door open and both mains and battery disconnected the alarm is still going off! Told to put in engineers mode but unable to do this. Help!
