How to check thermostat?

zanussi fridge freezer gone on the blink, motor would not stop, fridge not getting cold freezer shelfs constantly defrosting, have turned it off found and removed thermostat in fridge, need to know test procedure.?

compressor should stop when thermostat is turned down just before switch off position problem is possible to little pressure in system and you can only test that with pressure gauge.also check fan inside cabinet working and condensor radiator not frozen
