i used a pair of neat side cutters and nut spinner. worked the best. i am sure to use different screws to put back together. ps some shaving may be needed to reach the nut.

I have a 2NG1GB toaster, and unfortunately the security sets from Screwfix do not fit these bolts. I'm still looking for a tool to extract these.

A good security type set should contain the bit you need. Available from Screwfix or some pound shops
