how do I replace faulty oven thermostat Zanussi ZCE7680W?

The thermostat on my main oven Zanussi ZCE7680W is faulty. It is very hot even on 130Deg. I cannot afford an engineer,my husband is fairly handy and we would like to try and replace it ourselves. Can anyone give us instructions please. any help greatly appreciated.
