my car is fiat punto 2001 i would like to know how to fix thermostate in engine

What's your prob? Car running too cold? Then thermo stuck open. You need to change it. Will be located within your thermo housing, somewhere off your top rad hose, where that meets engine. You'll need to drain coolant (when cold). Take housing off, replace thermo. Use a new gasket or gasket sealant. Then replace antifreeze, use a 50/50 water antifreeze mix.
