How do I remove the fitting for the flush on my hidden cistern toilet?

by fitting do you mean the button that you press to flush? if so to remove this from a hidden cistern you first have to remove the panel the flush button is attached to, The panels are either fixed with screws and caps or on a lift up and off system, then once the panel is removed the flush button can be removed by unscrewing the locking nut on the inside of the panel.
