Mend Ideal LP522 Gas Boiler Hot Water Temperature

Ideal Mexico gas boilere carries on heating when controller is off?

Could someone please tell me why my boiler continues to heat the hot water when the controller (Lifestyle LP522) is off and the water is much hooter that the cylinder stat which is set at 57?
