Mend Proline FS887 Temperature Defrost Thermostat

Proline FS887 freezer?

How do I replace a thermostat on a Proline FS887 freezer? At present the temperature is far too low - even softscoop ice cream is so solid it has to be defrosted in a microwave before there is any chance of using a scoop!
