how to I fix my Peugeot 206?

There is a hissing noise coming from what seems to be the passenger driving seat when ever I take the foot off the break. I have a Peugeot 206 reg y931 jkw

Yup, as said already, brake servo need replacement. These cars being originally designed for left-hand drive the brake master cylinder etc is on the passenger side.

Leaking brake servo. Replacement is the usual solution.

Sorry, it is the passenger dash board, not the seat that the hissing noise is coming from.
