if my gainsborough stanza hasnt got a thermostat how do i solve the problem of the water being to hot even on the lowest setting

check your main stopcock or any isolation valves are fully open on the mains water pipe.
try running without the shower head on and the hose hanging straight down, is it still to hot ?

if so check the inlet filter is clean.
if still hot you need to check the flow valve.
