What is the correct wiring to the fan element?

There is no correct or wrong way to wire the element. It has only 2 wires and they can go either way round. the only other wire you may have will be the earth and that will be clearly marked. The oven its self will not have any main fuses as it should be connected directly into the outlet and this will be covered by the RCD trip switch.
