Hot water is eratic at all taps, but heating works OK.

Is Hot Water ok at other taps say basin or kitchen?
if so sounds like you have a problem with your Shower Mixer valve, boiler sounds like it is going up & down as the burner turns up and down to match the demand for hot Water this is normal
If Hot Water is erratic at all taps suspect DHW Thermistor
