There are many, many different makes and models of fryers around. So: which is yours?
While you decide whether or not to supply all the relevant information, here's a few thoughts:
* If you have changed the thermostat three times to no avail, doesn't that suggest it wasn't failed in the first place?
* How do you know the fryer is going over temperature?
* Did you wire in the replacement thermostat properly?
* Is the thermostat sensor in the right place? Is it perhaps
somewhere that makes it think it is too cold, rather than
monitoring the actual temperature of the oil?
* If the temperature sensor is a separate item from the thermostat, is THAT OK?
