Mend Mazda 121 Overheating Coolant Temperature Gauge

Temperature guage goes up & down ?

Mazda bubble 121, 1994. just had new radator put in & themostat, new coolant, had air conditioning fixed,
now the guage is jumping around, even going around corners. Not overheating or running hot.
Bit of a mistery ????
