stove simmerstat?

It will be one of the new blue square ones no doubt. They are not very good & pack up quite frequently. They are marked on the back next to each terminal. Connect the wire coming from the power supply point (Fuse, Simmerstat next to it) to the terminal marked Phase. The wire going to the element (usually white) goes on the load terminal. All the blue wires go on the neutral terminals (there is two. Use either or both)
