Disconnecting an old washing machine?

I'm having a new washing machine delivered tomorrow but don't seem to be able to disconnect my old one without flooding everywhere. I don't have the black cut of switches on the pipes from my washing machine so don't know how to disconnect it without flooding the place. I turned the mains water off but water still kept pouring out of the mains pipe. Not sure where I'm going wrong so I've reconnected it for now. Can anyone help.
