how do I cap a water supply in the house?

With a cap... the type of cap depends on the type of pipe that you're "capping". You need to know what the feed is that you want to cap... galvenized, PCV, CPCC or copper... they all
use different caps... all types of caps can usually be found at your local home impovement stores (or hardware store).
The water needs to be shut off to do it... to cap galvenized, youll need a pipe wrench... for PVC & CPVC you'll need glue and a saw or PVC cutter... copper requires soldering (unless there is a threaded fitting on it now)... Easiest way is to figure out which type and SIZE pipe you have, (SIZE IS VERY IMPORTANT... A 1/2 INCH CAP WILL NOT WORK ON A 3/4 INCH PIPE !!) then go to local hardware store and ask for advice.
If you installed the plumbing fixures in the new kitchen, you
should be able to tackle this... If not I'd look for a local handyman or a plumber to do it.
