I have a Belling Formula Two Double oven cooker XOU188 - I need to get the main oven door off to change the hinges. I would ideally like to get a service manual or diagram of the internals.

if its like my belling XOU9OFP then if you locate the two screws where the hinge goes into the door. uscrew them , then slide the door towards you . Or slide the whole oven out and you'll see two screws holding the hinges just undo them . they just slide out. i hope that helps.
