The refigerator is freezing the vegetables even on the warmest setting?

Not necessarily the thermostat. You need to check the temperature at the point were the thermostat attaches to the evaporator. If you post back the temperatures and the type of fridge IE ‘Larder fridge’ or ‘ice-box type’ compressor or absorption type I can advise further. Its as well to check same buying a stat you dont need
